INGREDIENTS

  • 1 1/2 cup cocoa powder, unsweetened
  • 0 3/4 cup Cocoa powder, unsweetened, processed with alkali
  • 0 3/4 cup Butter, unsalted
  • 2 each Egg
  • 3 white Egg White
  • 0 1/4 cup Heavy Cream, liquid
  • 0 1/2 tsp Salt
  • 0 1/4 tsp Baking Powder
  • 0 1/2 cup Confectioners (powdered) erythritol
  • 0 1/2 cup Swerve Sweetener, Brown
  • 3 tablespoon truvia
  • 1 tsp Vanilla Extract
  • 1 Piece Atkins Endulge Peppermint Pattie

DIRECTIONS

  1. Preheat oven to 325°F. Grease a 9-inch by 9-inch baking pan with cooking spray, line with parchment paper and grease with cooking spray again.
  2. Sift the two cocoa powders together into a large mixing bowl. Melt the butter, add to the cocoa powder and stir until no dry spots remain. Set aside to cool for 5-10 minutes.
  3. Add the eggs and egg whites, cream, salt and baking powder to the cocoa mixture. Use a hand mixer on medium speed to combine until a thick, uniform batter forms, about 2 minutes. Add the sweeteners and vanilla and continue beating until mixture is smooth and glossy.
  4. Scrape the batter into the prepared baking pan, smoothing it out to evenly fill the pan. Dice Atkins Endulge Peppermint Patty into small pieces, the size of small chocolate chips, and scatter evenly over the top of the brownie batter.
  5. Bake until a toothpick inserted into the middle comes out with a few moist crumbs attached, about 40 minutes.
  6. Let cool for at least 15 minutes before cutting into squares.
