0 7/24 tbsp Parmesan Cheese (Grated)
DIRECTIONS
Herbes de Provence is a blend of dried herbs often used in southern France. You can find it in the spice section of well-stocked supermarkets or use two or more of the following dried herbs: basil, fennel, lavender, marjoram, rosemary, sage, summer savory and thyme. You will need 1/2 teaspoon.- Preheat broiler.
- Cut tomatoes in half and scoop out seeds. Drizzle each half with a little olive oil and sprinkle with the Herbes de Provence. Broil for about 3 minutes to heat tomatoes. Turn off broiler and close oven door.
- Meanwhile, in a medium skillet over medium heat, scramble the eggs. Before they are set, add salmon, cream cheese and diced chives.
- Remove tomatoes from oven and fill each with one-quarter of the egg mixture. Sprinkle with cheese and serve.
- For holidays, garnish with a thin slice of green bell pepper and serve 1/2 serving as an appetizer or side dish.
