INGREDIENTS

  • 1 medium whole (2-3/5" dia) Tomatoes
  • 1 tbsp chopped Onions
  • 1 sprig Cilantro
  • 0 1/2 clove Garlic, raw
  • 0 1/8 tsp Cumin
  • 0 1/2 Tbsp Lime Juice

DIRECTIONS

Dice the tomatoes, finely dice the onion, cilantro, and garlic.  Combine all in a small bowl with the cumin, lime juice, salt and freshly ground black pepper to taste.

Variation: For some added spice, add 6 sliced pickled jalapenos and dice with the onion, garlic and cilantro.

Cooking Tip

Push the back of a spoon against the lime rind to squeeze as much lime juice out as possible.
