100 gram(s) Acai, frozen puree, zero sugar (1 packet= 100 g)

1 teaspoon(s) Lakanto monkfruit sweetener with erythritol (1 tsp= 4g)

8 large Strawberries, fresh, whole

1 1/3 cup Greek Yogurt, plain, unsweetened, whole milk

2 Tbsp (2 T = 1 oz) Cashews, whole, roasted.
DIRECTIONS
- In a medium saucepan over medium heat, warm the acai puree and ½ teaspoon sweetener to steaming, reducing heat if needed to prevent a boil. Heat for 5 minutes to reduce and thicken. Remove from heat and cool in the refrigerator for 30 minutes.
- While the acai is cooling, in a small bowl toss sliced strawberries with remaining sweetener and set aside.
- Assemble the parfait. Using two 8-ounce jars or glasses, layer 1/3 cup yogurt on the bottom, topped with 1 tablespoon acai puree, and ¼ of the strawberries (1.25-ounces). Repeat layers in each glass, and top each parfait with ½-ounce cashews.
