INGREDIENTS

  • 5 serving Kroger Pork Rinds (1/2 oz)
  • 9 teaspoon Frank's Redhot Buffalo Wings Sauce
  • 1 1/2 tbsp Butter - Unsalted - Kroger Brand
  • 2 1/4 serving Hot Sauce, Sriracha Hot Chili Sauce 1 tsp (5g)
  • 0 2/3 Tbsp Apple Cider Vinegar
  • 0 1/4 head, large (6-7" dia) Cauliflower, raw
  • 1 each Egg
  • 1 1/2 oz Maytag Blue Cheese

DIRECTIONS

  1. Preheat your air fryer to 390°F for about 10 minutes while you are preparing the cauliflower.
  2. Pulse 2.5 ounces of pork rinds in a food processor until they are broken down to a sand like texture, being careful not to over process into a paste. Measure out ¼ cup plus 2 tablespoons of the ground pork rinds into a large bowl. Add the hot wing sauce, melted butter, Sriracha, and vinegar to the pork rinds and stir until well combined. It will be a thick batter consistency.
  3. In another medium to large bowl, whisk the egg until frothy.
  4. Cut the cauliflower into florets, ensuring none are overly large, and place in the bowl with the egg. Toss to coat, ensuring that the egg gets into as many nooks and crannies in the cauliflower as possible. Then, one by one, coat each floret in the wing sauce batter, smoothing it onto the surface and into the nooks of the cauliflower so each floret is nicely coated.
  5. Once the air fryer is preheated, arrange the cauliflower in a single layer in the basket. Cook for 5 minutes at 390°F. Remove from the fryer, sprinkle with the blue cheese and serve while hot.
