1 lb raw ground beef, 5% fat USDA

6 lrg fresh radishes USDA

1 tsp powder chili peppers USDA

0 1/2 tsp table salt USDA

0 1/4 tsp garlic powder USDA

10 fl-oz canned original diced tomatoes, with green chilies Ro-Tel

6 bag Atkins Nacho Cheese Protein Chips

3 Tbsp sour cream, cultured USDA

3 Tbsp fresh green onion, tops & bulb USDA

2 Tbsp sharp cheddar cheese, fine shredded Sargento
DIRECTIONS
- In a large skillet over medium heat, brown the ground beef until cooked through. Chop radishes and add them to the ground beef. Sprinkle with chili powder, salt and garlic powder and stir until fragrant. Stir in the diced tomatoes with green chili, reduce heat to medium low, cover and cook until the radishes are tender, about 5 minutes. Remove the cover and allow the liquid to reduce, about 5 minutes more.
- Add 2/3 cup meat mixture to each bag Nacho Cheese Protein Chips. Top each bag with ½ tablespoon sour cream, ½ tablespoon sliced dark green portion of green onions, and 1 teaspoon cheddar cheese. Enjoy while hot. One bag assembled as described is one serving.
