0 1/4 large (2.25 per pound, approx 3-3/4" long, 3" dia) Red Sweet Pepper

0 1/4 large (2.25 per pound, approx 3-3/4" long, 3" dia) Green Sweet Pepper

1 slice (1 oz) Monterey Jack Cheese
DIRECTIONS
- Heat a skillet with 1 teaspoon oil over medium-high heat.
- Crumble the sausage link or leave whole and slice after cooking. Sauté until just beginning to brown. About 3 minutes. DIce the peppers and add them to the sausage. Cook until sausage is browned and peppers are softened, about 5 minutes.
- Sprinkle cheese on top and allow to melt 1-2 minutes. Serve immediately.
