1 envelope Gelatin, unsweetened

2 tablespoon Tap Water

1 1/2 cup Heavy Cream, liquid

1 each Atkins Café Caramel Shake

3 tablespoon Confectioners (powdered) erythritol

5 drop Liquid Stevia Drops

1 tsp Vanilla Extract
DIRECTIONS
Ingredient note: We recommend using English Toffee flavored liquid stevia drops for this recipe.
- In a cup, sprinkle the gelatin onto the water and set aside.
- In a small saucepan, whisk together the cream, Atkins Cafe Caramel Protein Shake, sweeteners and vanilla. Warm over medium heat, stirring occasionally, until just starting to simmer, about 10 minutes.
- Remove from heat, and whisk in the gelatin until dissolved. Fill 6 ramekins with ½ cup of the liquid, cover with plastic wrap, and refrigerate for at least 3 hours or until the gelatin is set. OPTONAL: serve with a dollop of whipped cream (1 tablespoon adds .021 net carbs), or a teaspoon of sugar free caramel syrup (does not add net carbs).
Variations: We developed this recipe using the Café Caramel shake, but you could substitute any other shake for a wealth of flavor options.
