4 sweetpotato, 5" long Sweet Potato

3 oz Sugar Free Maple Flavored Syrup

3 Tbsp Ginger Root, fresh, grated

3 tablespoon Unsalted Butter Stick
DIRECTIONS
- Heat oven to 450°F. Butter an 8-by 10-inch baking dish.
- Cook potatoes in boiling salted water until almost tender, 8-10 minutes. Drain.
- Combine syrup and ginger in a small saucepan. Cook over low heat until syrup is warm and the flavors have blended, about 3 minutes.
- Arrange potatoes in a single layer in baking dish. Pour syrup mixture over potatoes. Dot with butter. Cover with aluminum foil and bake until potatoes are very soft, about 40 minutes. Garnish with fresh herbs if desired.
