1 head, large (6-7" dia) Cauliflower

4 oz Roasted Bell Peppers

10 each Kalamata Olives

2 tbsp Parsley

2 tablespoon Extra Virgin Olive Oil
DIRECTIONS
- Place cauliflower in a medium pot fitted with a steamer basket over lightly salted water. Bring to a boil. Steam 6-7 minutes until tender but firm.
- Dice bell pepper, slice the olives and coarsely chop the parsley.
- Drain cauliflower. Mix in bell pepper, olives, olive oil and parsley. Season to taste with salt and freshly ground black pepper.
Cooking Tip
This is a great side dish to pair with a main protein. Try it with grilled lamb for a Mediterranean dish.
