INGREDIENTS

  • 1 tsp Extra Virgin Olive Oil
  • 0 1/2 cup, chopped Watercress
  • 2 large Egg (Whole)
  • 0 1/2 cup, shredded Cheddar Cheese

DIRECTIONS

  1. Heat oil in small nonstick skillet over medium-high heat. Add watercress and sauté for 1 minute until tender. Add salt and freshly ground black pepper to taste. Remove from skillet and set aside.
  2. Add eggs to skillet and cook for 2 minutes on medium heat until underside is lightly browned. Flip and cook 1 more minute.
  3. Add watercress to half of omelet and top with cheese. Fold over other half and cook for 1 more minute to melt cheese. Serve immediately.
