1 1/2 fl oz Fresh Lime Juice

1 tablespoon Extra Virgin Olive Oil

2 tbsp Chili Powder

1 tsp Cumin

0 1/2 tsp, leaves Oregano

0 1/4 tsp Cinnamon

32 oz, boneless, raw Salmon
DIRECTIONS
- Zest 1 teaspoon of each of the lemon, lime and orange. Juice the lemon and lime and place all in a small bowl. Mince the garlic and add to the bowl.
- Combine the remaining paste ingredients in the bowl with the zests and juices; mix well. Allow to sit for 30 minutes to thicken and preheat a grill or oven to 350°F.
- Place salmon on large pieces of aluminum foil. Spread the rub evenly over the salmon steaks and carefully bring all the edges of the foil up, crimping the ends to form a sealed packet for each steak.
- Grill or bake about 12-18 minutes until the salmon is cooked through; translucent and no longer red in the center. Serve immediately or cool and chill overnight to serve on a salad.
