INGREDIENTS

  • 7 fl ounces Atkins Dark Chocolate Royale Shake
  • 0 1/2 cup cottage cheese, 4% milk fat Cabot Creamery
  • 2 Tbsp heavy whipping cream USDA
  • 2 tbsp Magic Baker zero sugar baking blend, Splenda
  • 1 Tbsp cocoa powder, unsweetened USDA
  • 1 tsp vanilla extract USDA
  • 2 bar Atkins Endulge Crunchalicious Bar

DIRECTIONS

Equipment note: This recipe uses a Ninja CREAMi* machine. You will need one empty CREAMi pint along with the machine for this recipe.


  1. In a blender, combine Atkins Dark Chocolate Royale Shake, cottage cheese, sweetener, heavy cream, cocoa powder and vanilla extract. Pulse to break up the cottage cheese, then process on high power until fully combined, at least 1 minute. Pour into CREAMi pint, attach lid and freeze for 24 hours.
  2. Process using the Ninja CREAMi machine on the light ice cream setting, then re-spin for the best texture. Add chopped Atkins Endulge Crunchalicious Bars and process on mix in setting. Serve immediately, or freeze for 1 ½-2 hours to firm up to scooping consistency. One third of the pint, or two small scoops, is one serving.

Cooking Tip

Full fat, small curd cottage cheese provided just a touch of tang to the rich chocolate flavor in this high protein ice cream. Blending well helped minimize the tang, as did the cocoa powder. We love the idea of making this recipe your own by changing the flavor of shake or the mix in. Just keep an eye on net carbs of any addition or substitution.
