6 large Boiled Egg

4 Tbsp Mayonnaise (Hellman's Real)

1 tsp Dijon Mustard

2 tbsp Celery

1 medium (4-1/8" long) Scallions or Spring Onions

2 oz, boneless, cooked Fresh Ham

1 1/3 tbsp, drained Capers
DIRECTIONS
- Cut the boiled eggs in half lengthwise; scoop yolks into a bowl and mash with a fork. Add the mayonnaise and mustard and mix until smooth and well combined.
- Dice the celery, onion and ham and place in the bowl with yolks. Add the capers, mix well and taste. Season to taste with salt and pepper.
- Divide the yolk mixture evenly among the reserved whites, mounding it slightly. Garnish with paprika and parsley if desired.
- Eggs may be stored, covered in plastic in the refrigerator for up to 1 day.

For best results, make sure the eggs are hard boiled and completely cool before making this recipe.
