24 oz Sea Bass (Mixed Species)

4 tablespoon Extra Virgin Olive Oil

0 1/2 small Onions

10 oz Artichokes (Globe or French, Unprepared, Frozen)

2 tbsp Parsley

2 small whole (2-2/5" dia) Red Tomatoes

0 1/2 fl oz Fresh Lemon Juice

0 1/2 tsp Salt

0 1/4 tsp Black Pepper
DIRECTIONS
- Sprinkle fish with salt to taste and refrigerate until needed. Dice the onions and quater the artichokes.
- Heat 2 tablespoons olive oil over medium heat in a large skillet with a lid. Add white onions and artichokes; cook 8 minutes until onions are soft and translucent.
- Add tomatoes, lemon juice, salt and pepper. Transfer to a saucepan and keep warm.
- Pat fish fillets dry. Wipe out skillet and return to a medium-high heat. Add remaining 2 tablespoons olive oil and heat until oil shimmers. Add fillets in a single layer and cook 2 - 3 minutes without shaking the pan, until golden on the bottom. Flip fillets with a spatula.
- Top fillets with artichoke mixture, reduce heat to low, cover and cook 3 - 5 more minutes. Sprinkle with parsley before serving.
