INGREDIENTS

  • 1 Tbsp cream cheese USDA
  • 0 1/2 tsp liquid cherry flavor, Kool-Aid brand
  • 3 Tbsp heavy whipping cream USDA
  • 1 shake Atkins Strong Vanilla High Protein Shake
  • 0 1/2 cup fresh sweet cherries USDA
  • 4 truffles Atkins Endulge Milk Chocolate Truffles

DIRECTIONS

Equipment note: This recipe uses a Ninja Creami* machine. You will need one empty Creami pint along with the machine for this recipe.


  1. In a medium microwave safe bowl, warm the cream cheese for 10 seconds in the microwave. Whisk cherry flavor into the warm cream cheese until it reaches a thick icing texture. Slowly whisk in heavy cream until evenly combined then stir in Atkins Strong Vanilla Protein Shake. Pour into the CREAMi pint, cover and freeze for 24 hours.
  2. Remove frozen pint, process using Ninja Creami on the lite ice cream setting, then follow up with a respin for the best texture. Create a wide hole in the center, and add chpped fresh cherries and chopped Atkins Endulge Milk Chocolate Truffles, and process for Mix In. Serve right away, or freeze for up to 30 minutes before scooping. Two small scoops (one third of the pint) are one serving. If desired, garnish with chopped truffle and a cherry.

Cooking Tip

We tested a variety of recipes using the Ninja CREAMi machine and found including cream cheese really helps create an ice cream texture, while Atkins shakes provide a wonderful rich flavor. This specific recipe was crumbly with the first processing, but respinning two times resulted in the perfectly creamy texture we were looking for. The most interesting part of this recipe is the sugar free flavoring meant for flavoring water that we found provided a delicious cherry flavor base without adding any sugar or net carbs.
