INGREDIENTS

  • 1 Tbsp cream cheese USDA
  • 2 tbsp truvia, sweet completed granulated sweetener
  • 1 tsp vanilla extract USDA
  • 0 1/4 tsp lemon zest USDA
  • 0 1/4 cup lemon juice, 100%, fresh squeezed FNDDS
  • 1 shake Atkins Strong Vanilla High Protein Shake
  • 3 Tbsp heavy whipping cream USDA
  • 1 bar Atkins Lemon Creme Protein Wafer Crisps

DIRECTIONS

Equipment note: This recipe uses a Ninja CREAMi* machine. You will need one empty CREAMi pint along with the machine for this recipe.


  1. In a medium microwave safe bowl, warm the cream cheese for 10 seconds in the microwave. Whisk the sweetener, vanilla extract, and lemon zest into the warm cream cheese until it reaches a thick icing texture. Stir in lemon juice until well combined. Slowly whisk in Atkins Strong Vanilla Protein Shake and heavy cream until evenly combined. Pour into the CREAMi pint, cover and freeze for 24 hours.
  2. Remove frozen pint, process using Ninja CREAMi on the lite ice cream setting, then follow up with a respin for the best texture. Place ½ of the chopped Atkins Lemon Crème Protein Wafer Crisp bar into the center, and process for Mix In. Top with remaining chopped bar and serve right away, or freeze for up to 30 minutes before scooping. Two small scoops (one third of the pint) are one serving.

Cooking Tip

We tested a variety of recipes using the Ninja CREAMi machine and found including cream cheese really helps create an ice cream texture, while Atkins shakes provide a wonderful rich flavor. Using this ice cream base, you can switch out the lemon juice if desired, just be sure to adjust the net carbs with any swaps for accurate tracking.
