INGREDIENTS

  • 1 3/4 cup, shredded Mozzarella Cheese, whole milk
  • 3 Tbsp Cream Cheese, original
  • 2 each Egg
  • 0 1/3 cup Coconut Flour
  • 2 oz Pimento (roasted red pepper)
  • 4 piece Pepperoncini
  • 17 each Green Olives, canned
  • 2 oz Provolone Cheese
  • 2 1/2 oz Boar's Head Genoa Salami
  • 0 1/2 Tbsp Butter, salted or unsalted

DIRECTIONS

  1. Preheat oven to 350°F.
  2. In a microwave safe bowl, microwave the shredded cheese and cream cheese for 45 seconds. Stir and microwave for another 45 seconds until fully melted and bubbling around the edges. Mix until well combined.
  3. In a medium bowl while the cheese is melting, combine the eggs and coconut flour with a fork until all the flour is incorporated. Add the melted cheeses and with well-oiled or gloved hands kneed together the cheese and egg mixtures until even in texture and well combined.
  4. Roll dough into a 12-inch by 10-inch rectangle (about 1/4-inch thick) between two pieces of parchment paper. Remove top sheet of parchment paper and place on a baking sheet. Cook for 10 minutes.
  5. While the dough cooks, roughly dice the roasted peppers, pepperoncini, and olives and mix together in a small mixing bowl.
  6. Remove the dough from the oven, spray the top with cooking spray, cover with another piece of parchment paper, and roll the dough out to an even layer. Remove top sheet of parchment and set aside (you will use it again in a moment). Leaving a 1-inch boarder on one long side of the dough and a ½-inch boarder on both short sides of the dough, layer ½ cup of the olive mixture, followed by the provolone cheese, then the salami, and ending with the remaining olive mixture. Use the parchment paper to roll into a log toward the long edge without fillings. Pinch the short edges together, and place the roll on the sprayed parchment in the center of the baking sheet, seam side down. Cut 3 slices in the top of the dough, and brush with melted butter. Bake for 30 minutes.
  7. Remove from oven and let cool for 10 minutes. Slice into 10 roughly equal pieces (about 1-inch thick) and serve.
