×INGREDIENTS
-
7 ea pickles, mini FNDDS
-
2 oz cream cheese USDA
-
1 Tbsp fresh scallions, tops & bulb, chopped USDA
-
0 1/4 cup cheddar cheese, shredded USDA
-
0 1/4 tsp garlic powder USDA
-
7 slice raw bacon, cured USDA
DIRECTIONS
Ingredient note: we suggest using 4-inch long mini or baby pickles in this recipe. If smaller pickles are used, you may need to adjust the amount of filling in each.
- Slice pickles in half and use a spoon to scrape out the seeds, creating a boat. Place sliced side down to drain on a paper towel lined plate.
- In a small bowl, mix together room temperature cream cheese, minced green onion and garlic powder until well mixed. Add finely shredded sharp cheddar cheese and mix to combine.
- Use a paper towel to dry out the hollow of each pickle halve. Fill each halve with 1 teaspoon cream cheese filling, smoothing to fill evenly. Wrap each stuffed pickle with ½ slice bacon.
- Heat air fryer to 390° for 3 minutes. Fry bacon wrapped stuffed pickles in a single layer until bacon is crispy and filling is melted and bubbly, about 5 ½ minutes. Allow to cool before serving. Two wrapped pickle halves is one serving.
Cooking Tip
No air fryer? No problem! Bake in the oven at 350°F for 15 minutes or until bacon is crispy.
