DIRECTIONS
Equipment note: This recipe makes use of 5, 3-fluid ounce ice pop molds and popsicle sticks.
- Wash blackberries. Place 3 small whole blackberries (about 15 grams of blackberry) into each of 5 ice pop wells.
- Into a blender jar, add remaining blackberries and ½ cup Atkins Black Tea Latte shake. Pulse the blender to begin breaking up the blackberries, then blend on high until the blackberries are completely blended in, about 1 minute.
- Into a medium bowl, pour blackberry mix through a fine mesh strainer and dispose of the solids. Add remaining shake to the bowl, and evenly pour into the ice pop wells with the fresh blackberries. Place popsicle sticks and freeze for at least 5 hours. One ice pop as described is one serving.
Cooking Tip
Adding fresh blackberry flavor to Atkins delicious Black Tea Latte shake makes for a perfect frozen summer treat. We found that blending the whole shake with the blackberries resulted in less dense ice pops that were difficult to remove from the molds, while blending just ½ cup kept the mixture from taking on so much air, resulting in ice pops that were much easier to remove, and tasted just as great!
