How to Calculate Atkins Net Carbs

INGREDIENTS

  • 2 lrg raw egg USDA
  • 0 1/8 tsp table salt USDA
  • 0 1/8 tsp black pepper, ground USDA
  • 1 Tbsp butter, unsalted USDA
  • 0 1/4 cup cheddar cheese, shredded USDA
  • 1 Tbsp fresh chives FNDDS
  • 1 wrap original egg white wraps, Egglife

DIRECTIONS

  1. In a small bowl, use a fork to whisk eggs with salt and pepper.
  2. In a small (6-inch) non-stick skillet over low heat, melt butter. When butter is beginning to froth, add whisked eggs. Cook while jiggling the skillet and using a wooden spoon to stir the eggs constantly, keeping the egg curds small. When the eggs have formed curds, but there is still some liquid, about 3 minutes, scrape eggs together ensuring an even layer of egg without any holes. Remove from heat, cover eggs with an even layer of shredded cheese and sprinkle with chives. Fold one side of the omelet into the center, then fold the opposite side over and gently place on a plate.
  3. Place the small skillet over medium heat and place one egg white wrap in the center. Cook until beginning to brown, 1-2 minutes. Flip and while the other side browns, place the omelet in the center of the egg white wrap. Fold sides of the egg white wrap over the omelet, and flip so the seam side of the wrap is down. Cook until cheese is melted, another 30 seconds. Enjoy while warm. One wrap as described is one serving.

Cooking Tip

This recipe uses the French technique for omelet making. It leaves the center of the omelet as a loose curd that is just cooked through, resulting in a creamy, melted cheesy middle for this omelet roll. There are some amazing videos of Jacques Pepin making omelets available online that show visual cues to use when making a French style omelet which we loved watching. Note that while we used an egg white wrap in this recipe, there are many low and no carb wraps on the market that you can substitute in if desired. We love the idea of making this recipe your own with your favorite herbs and cheese. Just be sure to keep track of any net carb differences for tracking purposes.
