24 oz Chicken Leg, bone-in, with skin
DIRECTIONS
- Chop the bell pepper. Remove the seeds and stems from the chili peppers and jalapeno, and thinly slice. Mince or press the garlic.
- Warm a non-stick 10-inch skillet over medium heat. Add the olive oil and red onion, sautéing until becoming translucent, about 2 minutes. Add the garlic and sauté until fragrant, about 30 seconds. Add chili peppers, bell pepper, jalapeno, salt, and pepper, sautéing until softened, about 5 minutes. Remove from heat and let cool for 5 minutes.
- Scrape the sautéed veggies into a blender. Add lemon juice, vinegar, and smoked paprika and blend until a paste forms, adding water if needed. Taste and add salt and pepper as desired.
- Measure out ½ of the sauce (about 1/3 cup) into a resealable plastic bag. Add chicken legs, coating each one in the sauce, and marinate at room temperature for 40 minutes. Allow the remaining sauce to sit at room temperature until needed, but no longer than 1 ½ hours.
- Preheat grill. Reduce flame to medium and grill marinated chicken legs, turning every 7 minutes or so, until they reach an internal temperature of 165°. Serve each chicken leg with a heaping tablespoon of piri piri sauce on the side. A 6-ounce chicken leg, and 1 tablespoon piri piri sauce is one serving.

Chili peppers are a delicious ingredient to spice up your meals! This recipe can be adapted to meet your desired level of heat by choosing the right chili pepper. In our original recipe, we used fresh Fresno red chilies and fresh jalapeño to achieve a very mild, tangy sauce. For more of a spicy bite, try adding one or more red bird’s eye chilies, or to make this a more traditional piri piri specifically look for African bird’s eye chilies. Alternatively, replace the jalapeno with a serrano green chili for a spicier outcome.
