  • 0 1/4 cup almond flour, super finely ground, gluten free King Arthur Flour
  • 1 tsp garlic powder USDA
  • 1 tsp paprika USDA
  • 0 1/2 tsp table salt USDA
  • 20 oz raw salmon FNDDS
  • 2 Tbsp olive oil USDA
  • 2 tbsp allulose, liquid sweetener
  • 1 Tbsp original cayenne pepper hot sauce Frank's Red Hot
  • 0 1/2 tsp kosher salt, coarse Morton
  • 6 Tbsp plain greek yogurt, whole milk FNDDS
  • 3 Tbsp mayonnaise, real Best Foods
  • 2 Tbsp canned chipotle chile peppers, in adobo sauce Hormel
  • 1 Tbsp lime juice, 100%, fresh squeezed FNDDS
  • 1 tsp fresh garlic FNDDS

DIRECTIONS

Ingredient note: you will need about 1 ¾ pounds raw salmon filets for this recipe. Removing the skin will reduce the weight to about 20 ounces.

  1. Warm air fryer to 390°F.
  2. In a food processor, pulse Atkins Chipotle BBQ Protein Chips until no large chunks remain. Add almond flour, garlic powder, paprika, and table salt to the food processor and pulse until very well combined. Place in a large bowl.
  3. Remove skin from salmon fillets and cut into 1-inch square chunks. Place into the large bowl with the chip mix and shake until each piece of salmon is evenly coated in crumbs. Arrange a single layer on an air fryer pan and spray both sides with olive oil (about 1 tablespoon total). Air fry for 3 minutes, flip and fry another 3 minutes until browned and internal temperature is 145°F. Place cooked salmon bites on a serving plate and repeat until all salmon is fully cooked.
  4. While salmon is cooking, in a small bowl combine 1 tablespoon liquid no-sugar sweetener and hot sauce. Evenly drizzle sauce over cooked salmon bites, toss to evenly coat and sprinkle with coarse kosher salt.
  5. To make chipotle dipping sauce, in a food processor combine yogurt, mayonnaise, 1 canned chipotle, fresh lime juice, 1 tablespoon olive oil, remaining 1 tablespoon liquid sweetener, and garlic, scraping down the sides and bottom as needed, until very well combined. Scrape into a small bowl and serve with warm salmon bites. One serving is about 88 grams cooked salmon with 2 tablespoons dip.

Cooking Tip

This simple air fryer recipe comes together quickly, and you can make it your own by using your favorite liquid no-sugar sweetener. Consider liquid allulose, or a sugar free unflavored simple syrup. You can make your own simple syrup for this recipe by combining equal amounts of your favorite sugar free sweetener and water, heating over medium-low heat while stirring until fully dissolved. Then just let it cool before using in this recipe to develop a perfectly balanced, sweet and spicy flavor profile.
