2 cup fresh chayote, 1" pieces USDA

0 1/2 fl oz Real Lemon lemon juice, 100% FNDDS

3 tbsp Swerve sweetener, brown

0 1/2 cup almonds, sliced USDA

0 1/4 cup dried coconut, unsweetened USDA

2 Tbsp butter, unsalted USDA
DIRECTIONS
- Prepare chayote by washing, slicing in half, removing the seed, and slicing thinly, 1 ½ medium chayote should give about 2 cups slices. Core 1 small granny smith apple and slice thinly to get 1 cup.
- In a large bowl, combine thinly sliced chayote squash and thinly sliced granny smith apple until very evenly distributed. Use your hands if needed to separate apple slices and intersperse with squash slices. Add lemon juice, 1 tablespoon sweetener, ½ teaspoon cinnamon, ¼ teaspoon pumpkin pie spice and toss until all pieces of apple and squash are evenly coated. Set aside.
- In a small bowl, use a fork to combine remaining 2 tablespoons sweetener, ½ teaspoon cinnamon, ¼ teaspoon pumpkin pie spice, and salt. Add almonds and coconut shreds and mix until evenly distributed. Add melted butter and stir until evenly combined.
- Prepare 4 rectangles of foil (add an inner layer of parchment paper if desired). Place ¾ cup sliced apple and squash in the center, and top with ¼ cup almond topping. Fold foil into a packet, fold long sides together then the ends toward the middle.
- On a grill, place packets around edges. Over a campfire, place packets on the grate over the fire pit. Cook packets for 25-30 minutes, or until the apples are soft and the chayote is tender crisp. Remove from heat and allow to rest for 5-10 minutes before serving. Be cautious of hot foil and steam when opening packets. One packet as described is one serving.

Chayote squash makes a great low carb faux apple. It’s coloring matches granny smith apples, and it has a crisp peel and tender crisp mouthfeel that replicates the texture of apple remarkably well. Chayote will absorb and take on the flavors it is cooked with, not having a distinctive flavor of it’s own, which makes it perfect for the warming cinnamon of apple crisp. Note that it does take longer to soften during cooking, so aim to cook until it is tender crisp, not soft, so the apples do not turn to mush.If taking this with you camping, consider placing the prepared apples and squash in a resealable bag in the cooler, and keeping the prepared almond topping separate until ready to cook.
