6 cup Kroger Riced Cauliflower, frozen (85g per 3/4 cup)

0 1/2 cup Yellow Onion (chopped)

0 1/8 cup Matzo Meal

1 teaspoon(s) Kosher salt (1/4 tsp= 1.5 g)

8 Tbsp Canola Oil

0 1/2 cup(s) Duck fat
DIRECTIONS
- Fully thaw the cauliflower rice and mix with minced onion. Place in the center of a clean kitchen towel and squeeze out as much liquid as possible. Place in a medium bowl and mix with matzo meal, egg, salt, and pepper until well combined and evenly distributed. Measure 1/8 cup and shape into a patty, repeating until all cauliflower mixture is used.
- In a medium skillet, heat the canola oil and duck fat over medium. Cooking in batches so the patties do not touch in the pan, place patties in the oil (they should sizzle) and cook until golden brown, about 1 ½ minutes per side. Drain on a wire rack over paper towels, and serve warm.
