3 tbsp butter, unsalted

1 1/2 tablespoon Confectioners (powdered) erythritol

0 1/2 teaspoon SweetLeaf Stevia Sweetener (with inulin)

1 Pinch Salt

2 Tbsp Coconut Flour

0 1/2 tsp Vanilla extract

3 tbsp Lily's Sugar Free Chocolate Chips

1 bar Atkins Chocolate Almond Butter Bar
DIRECTIONS
- In the bowl of a stand mixer, cream together room temperature butter, confectioners erythritol, stevia and salt until lightened and well mixed, about 3 minutes. Add flour, cocoa powder and vanilla and mix on lower power until combined.
- In a microwave safe bowl, melt chocolate chips in 15 second intervals until fully melted. Mix into the dough until fully combined, scraping down the sides as needed.
- Chop Chocolate Almond Butter Bar into mini chocolate chip size pieces (about 36 pieces). Fold into the dough and portion into 4 equal balls, about 2 tablespoons each.
- Store in an airtight container in the refrigerator for up to 5 days. One serving is one cookie dough ball.
