INGREDIENTS

  • 3 tbsp butter, unsalted
  • 1 1/2 tablespoon Confectioners (powdered) erythritol
  • 0 1/2 teaspoon SweetLeaf Stevia Sweetener (with inulin)
  • 1 Pinch Salt
  • 2 Tbsp Coconut Flour
  • 0 1/2 tsp Vanilla extract
  • 3 tbsp Lily's Sugar Free Chocolate Chips
  • 1 bar Atkins Chocolate Almond Butter Bar

DIRECTIONS

  1. In the bowl of a stand mixer, cream together room temperature butter, confectioners erythritol, stevia and salt until lightened and well mixed, about 3 minutes. Add flour, cocoa powder and vanilla and mix on lower power until combined.
  2. In a microwave safe bowl, melt chocolate chips in 15 second intervals until fully melted. Mix into the dough until fully combined, scraping down the sides as needed.
  3. Chop Chocolate Almond Butter Bar into mini chocolate chip size pieces (about 36 pieces). Fold into the dough and portion into 4 equal balls, about 2 tablespoons each. 
  4. Store in an airtight container in the refrigerator for up to 5 days. One serving is one cookie dough ball.
