×INGREDIENTS
-
0 3/4 cup vodka FNDDS
-
0 1/4 cup elder flowers, dried
-
1 1/2 fruit fresh lemon FNDDS
-
2 tbsp Magic Baker zero sugar baking blend, Splenda
-
0 1/2 cup fresh peppermint USDA
-
10 cup municipal tap ice cubes USDA
-
40 fl oz champagne white wine, table FNDDS
-
10 fl oz sparkling water FNDDS
DIRECTIONS
Ingredient note: We used a dry prosecco for this recipe, but any dry bubbly white wine will work.
- Make homemade, sugar free elder flower liqueur. In a clean glass jar, combine vodka, dried elder flowers, 1 slice lemon (about 19 g) and no sugar sweetener. Place a tight fitting lid on the jar and shake until the sweetener is dissolved. Place in a cool dark place and allow to steep for at least 24 hours.
- Using a fine mesh strainer, strain out the solids from the elder flower liqueur, pressing gently on the lemon slice to release any juices. Discard solids and place liqueur in a clean jar. Store in the refrigerator until needed.
- To assemble each spritz, in an 8-ounce or larger glass muddle 5 mint leaves with ½ fluid ounce elder flower liqueur and allow to infuse for 3 minutes. Fill the glass with 1 cup ice, add 4 fluid ounces prosecco or another dry sparkling white wine, top with 1 fluid ounce sparkling water, and garnish with a lemon wedge and bunch of 5 mint leaves. One drink as described is one serving.
Cooking Tip
We love the idea of making homemade no sugar added liqueur, and this one is simple with great rewards. Feel free to use your own favorite sugar replacement, just be sure to shake the jar to allow all the sweetener to dissolve in the vodka. Note that the longer you allow the liqueur to steep, the more the herby elder flower flavor will come through in the liqueur.
