1 cup frozen peaches, unsweetened FNDDS

16 cookies Atkins Snickerdoodle Crunchy Protein Cookies

4 Tbsp chocolate baking chips, sugar free Hershey's
DIRECTIONS
Equipment note: This recipe uses a Ninja CREAMi* machine. You will need one empty CREAMi pint along with the machine for this recipe.
- In a medium pot, combine Atkins Creamy Vanilla Shake, gently crushed cardamom pods and lavender flowers over medium heat until just starting to bubble around the edges, about 3 minutes. Remove from heat, cover and allow to steep for 10 minutes. Strain out the cardamom and lavender.
- In a medium microwave safe bowl, warm cream cheese for 10 seconds in the microwave. Whisk in sweetener until a thick icing texture develops.
- In a blender, process ½ cup warm shake with frozen peaches until mostly pureed with a few chunks. Stir into the cream cheese mixture, then whisk while adding the remaining strained shake. Pour into an empty CREAMi pint, cover with a lid and freeze for 24 hours. Place a parchment covered baking sheet or platter in the freezer.
- In a medium flat bottom bowl, crush Atkins Snickerdoodle Crunchy Protein Cookies into crumbs.
- Process the frozen peach lavender gelato using the lite ice cream setting. Scoop into 16 balls, each roughly one rounded tablespoon or 25 grams. Roll each ball in the cookie crumbs to coat and place on the cold prepared pan. Place back in the freezer for at least 1 hour.
- To serve, place 4 gelato balls in each of 4 dishes and drizzle each dish with 1 tablespoon sugar free chocolate syrup. One dish as described is one serving.

Cooking Tip
Successfully forming balls from the gelato before it melts is an effort in quick work, and the only tricky part of this recipe. We found keeping the CREAMi pint in a bowl of ice as we scooped, and keeping the plate we placed the scoops on cold helped keep them from melting before we could get them back in the freezer. We love the idea of making this recipe your own by swapping cardamom and lavender for other aromatics without changing net carbs. You can also make the cardamom and lavender flavors more pronounced by allowing a longer steep before straining.
