INGREDIENTS

  • 0 1/4 cup butter, salted USDA
  • 6 tbsp sugar free powdered monkfruit sweetener with erythritol, Lakanto
  • 2 cookie Atkins Peanut Butter Protein Cookies
  • 0 1/2 cup creamy peanut butter, natural Smucker's
  • 4 bar Atkins Endulge Almond Craze Bar

DIRECTIONS

  1. Line a 7 ½” by 6” baking dish with parchment paper.
  2. In a medium bowl combine melted butter, powdered sweetener, and finely crumbled Atkins Peanut Butter Protein Cookies until well mixed and evenly combined. Mix in peanut butter and scrape into the bottom of the prepared baking dish, smoothing into an even layer. 
  3. In a small microwave safe bowl, microwave broken up Atkins Endulge Almond Craze Bars in 30 second intervals, stirring between, until fully melted. Pour over the peanut butter layer, smoothing into an even layer.
  4. Refrigerate until chocolate is set, about 1 hour. Remove from refrigerator, cut into 9 even pieces and serve. One piece as describes is one serving.

Cooking Tip

We call for a small baking dish for this low carb dessert recipe, but if all you have is an 8” by 8” or a 9” by 9” baking dish, increase the servings from 9 to 12 to get the appropriate quantities of ingredients. Then, once set, cut into 12 even pieces.
