INGREDIENTS

  • 1 each Atkins Strawberry Shake
  • 0 3/4 cup tap water FNDDS
  • 0 1/2 cup fresh strawberries USDA
  • 1 1/2 fl-oz rum FNDDS
  • 0 1/4 cup heavy whipping cream USDA
  • 1 tsp Swerve confectioners erythritol based sweetener

DIRECTIONS

  1. In a medium bowl stir together Atkins Strawberry Shake and water until combined. Pour into standard or small dimension ice cube trays and freeze until solid, about 6 hours or overnight.
  2. Into a small bowl with a lid, place strawberries cut into quarters or smaller pieces. Pour rum over the top and allow to soak at room temperature for at least 1 hour, or in the refrigerator overnight.
  3. Using a food processor with the slicing or grating attachment, process the ice cubes until they are broken down to the texture of shaved ice. Divide into two bowls, about 2 cups of strawberry cream ice piled up in each bowl.
  4. In a small flat bottom bowl use a hand mixer to whip cream and confectioners sweetener until soft peaks form. Divide evenly over the bowls of ice, about 2 rounded tablespoons on each. Strain the rum off the strawberries and divide between the two bowls, about 3 tablespoons on each. Serve immediately.
