INGREDIENTS

  • 0 1/2 Tbsp cream cheese USDA
  • 0 3/4 tsp vanilla milkshake protein powder, gluten free Quest Nutrition
  • 7 drop green food color
  • 2 Tbsp heavy whipping cream USDA
  • 2 tsp sugar free powdered monkfruit sweetener with erythritol, Lakanto
  • 0 1/4 tsp vanilla extract USDA
  • 3 pack Atkins Endulge Chocolate Break Bar
  • 1 1/2 g almonds, sliced USDA

DIRECTIONS

  1. In a medium bowl, use a hand mixer to combine room temperature cream cheese, protein powder, and food coloring until well combined.
  2. In a separate small bowl, use hand mixer to whip heavy cream, vanilla, and powdered sweetener to stiff peaks. Place half of the whipped cream into the cream cheese mix and use hand mixer to whip until evenly combined. Add remaining whipped cream and fold in until no streaks of whipped cream remain. Add more food coloring a few drops at a time to get desired color if needed. Scrape into a piping bag or plastic bag.
  3. Use a knife to cut Atkins Chocolate Break Bars in half lengthwise and place on a serving plate. Pipe about ½ tablespoon icing over each half break bar, smooth with a toothpick, creating a swirl at the halfway point to represent the knuckle. Place an almond slice at the end for the fingernail and serve. One iced bar as described is one serving.

Cooking Tip

We make a very small batch of icing for this recipe, which can be a little tricky. Before using the hand mixer, you can use a fork or rubber spatula to mix the cream cheese, protein powder, and food coloring together. Note that using a cold bowl will help the heavy cream to increase in volume as it whips up as well. We like the almost minty shade of green we got with 7 drops of green food coloring, but you can add more if you want a different shade of green. Try adding a couple drops of blue for a more teal shade, or a drop or two of red to get more brown tones. Icing is a great place to show your creativity!
