INGREDIENTS

  • 6 Atkins Low Carb Wheat Bread
  • 0 1/4 cup Parmesan Cheese (Grated)
  • 0 3/4 tsp, ground Oregano
  • 0 1/2 tsp Salt
  • 0 1/2 tsp Black Pepper, ground
  • 0 1/3 cup Coconut Oil
  • 1 large Egg (Whole)
  • 1 fl oz Tap Water
  • 1 tbsp Parsley
  • 32 oz Beef Top Sirloin (Trimmed to 1/8" Fat)

DIRECTIONS

Use the Atkins recipe for Atkins Low Carb Wheat Bread to make bread crumbs from 6 slices of bread.  Toast in the oven until dry (or use stale bread) then process in a food processor into bread crumbs.
 
  1. Preheat oven to warm setting.
  2. In a shallow bowl or on a plate, combine breadcrumbs, Parmesan cheese, oregano, salt and pepper. Heat 1/4-inch oil in a large nonstick skillet over medium-high heat.
  3. Prepare two steaks at a time, dipping steaks in egg and water mixture, then coating with crumbs. Sauté until golden brown and coating is crisp, about 3 minutes per side.
  4. Transfer to oven to keep warm while sautéing remaining steaks. Garnish with parsley and lemon wedges (optional).
