INGREDIENTS

  • 0 1/3 cup shelled (50 halves) English Walnuts
  • 4 clove Garlic
  • 3 cup Peppermint (Mint)
  • 0 1/2 cup Extra Virgin Olive Oil
  • 1 tbsp Red Wine Vinegar

DIRECTIONS

This recipe is suitable for all phase of the Atkins diet except for Induction due to the nuts.  
Each serving is about 2 tablespoons.
 
  1. Finely chop walnuts and garlic in food processor.
  2. Add mint leaves and chop finely.
  3. Add oil and vinegar and blend until pesto is smooth.
