INGREDIENTS

  • 1 cup Mushroom Pieces and Stems
  • 0 1/2 cup, chopped Onions
  • 3 tablespoon Extra Virgin Olive Oil
  • 14 oz Firm Silken Tofu
  • 1 cup Baby Spinach
  • 0 1/4 cup, shredded Cheddar Cheese
  • 3 tbsp Parmesan Cheese (Grated)
  • 4 large Egg (Whole)
  • 0 1/8 tsp, leaves Thyme (Dried)
  • 8 each Cherry Tomatoes

DIRECTIONS

  1. In a large nonstick skillet, over medium-high heat, cook the white onion and mushrooms in the oil until soft (about 3 minutes).
  2. Add the tofu and spinach and cook an additional 3 minutes.
  3. Stir in the tomatoes, eggs, Cheddar and Parmesan cheeses and 1/8 tsp thyme and cook until the egg is firm. 
  4. Serve immediately.
