1 cup Mushroom Pieces and Stems

3 tbsp Parmesan Cheese (Grated)

0 1/8 tsp, leaves Thyme (Dried)

8 each Cherry Tomatoes
DIRECTIONS
- In a large nonstick skillet, over medium-high heat, cook the white onion and mushrooms in the oil until soft (about 3 minutes).
- Add the tofu and spinach and cook an additional 3 minutes.
- Stir in the tomatoes, eggs, Cheddar and Parmesan cheeses and 1/8 tsp thyme and cook until the egg is firm.
- Serve immediately.
