INGREDIENTS

  • 0 1/2 fruit Pineapple
  • 0 1/2 cup Sucralose Based Sweetener (Sugar Substitute)
  • 0 1/2 cup Tap Water
  • 0 3/4 tsp Coconut Extract

DIRECTIONS

  1. In a food processor, pulse the pineapple until very smooth, about 2 minutes.
  2. In a small saucepan over high heat, dissolve sugar substitute in water. Remove from heat. Add pineapple purée and coconut extract, stirring to combine. Pour the mixture into a 9 x13 pan.
  3. Place the pan in freezer for 30 minutes or until ice crystals begin to form. Using a fork, break up ice and return to freezer. Continue breaking up ice crystals every 30 minutes until mixture is granular and completely frozen, about 1 1/2 hours.
  4. Once the mixture is frozen cover the pan with plastic wrap, or if making a day ahead, place granita in a plastic storage container with a lid and store in freezer.
  5. To serve, remove granita from freezer and allow to thaw for 2-3 minutes, breaking up any large ice crystals.
