2 tablespoon Extra Virgin Olive Oil

8 oz Firm Silken Tofu

3 tbsp chopped Scallions or Spring Onions

4 large Egg (Whole)

0 1/4 tsp Italian Seasoning

6 cap Portobello Mushroom Caps

0 1/4 tsp Salt

0 1/4 tsp Black Pepper

0 1/4 cup, shredded Whole Milk Mozzarella Cheese
DIRECTIONS
- Heat oven to broil. Cut Tofu into cubes.
- In a large nonstick skillet, heat oil over medium heat add the tofu and diced scallion and cook for about 3-4 minutes until tofu browns slightly.
- Add the half of the Italian seasoning and whisked eggs to the pan. Cook while stirring until the eggs are set.
- Meanwhile, place the mushroom caps, ribbed side up. on a foil lined baking sheet. Sprinkle with salt, pepper and additional Italian seasoning and broil for about 7 minutes until they begin to soften and darken in color, turning once. Remove from oven and spoon mixture into the mushroom caps, top with cheese and broil for 1 minute to melt cheese. Serve immediately.
