INGREDIENTS

  • 1 cup Chicken Broth, Bouillon or Consomme
  • 2 tbsp Tomato Paste
  • 1 tsp Chili Powder
  • 0 1/2 tsp Garlic
  • 1 tsp, crumbled Bay Leaf
  • 40 oz Chicken Breast Filet, skinless

DIRECTIONS

  1. In a slow cooker, whisk the chicken broth, tomato paste, and chili powder. Add the garlic and bay leaves. Season the chicken with salt and pepper then add it to the slow cooker. Cook on high, covered for 3 hours or until very tender. Flip all chicken pieces over about 1/2 way through cooking time.
  2. Remove from cooking juices and allow to cool. Reserve cooking juices in a small bowl. Once chicken is cool, shred with two forks and discard bones; add reserved cooking juices. Makes about 4-5 cups. Serving size is 2/3 cup.
  3. Freeze individual 2/3 cup portions in small freezer and microwave safe containers making sure some of the broth is added along with it. Freeze flat if freezing in zip top bags. Thaw before using and reheat gently for 1-2 minutes in the microwave until hot. May be kept frozen for up to 3 months.
  4. Alternative method: Simmer in a large covered pan for 35-45 minutes or until cooked through and falling off the bone. The meat will be more tender the longer it is cooked, the slow cooker is preferred.
