INGREDIENTS

  • 2 1/4 cup fresh red boston lettuce, medium, leaf FNDDS
  • 0 1/4 sml fresh red onion, mature FNDDS
  • 6 ea fresh cherry tomatoes FNDDS
  • 0 1/2 cup fresh red bell pepper, sliced Canadian Nutrient File
  • 4 lrg fresh radishes USDA
  • 1 sml fresh peaches USDA
  • 2 Tbsp olive oil USDA
  • 2 tsp balsamic vinegar, regular, 134015 DeLallo
  • 0 1/4 tsp table salt USDA
  • 0 1/4 tsp black pepper, ground USDA
  • 6 drop liquid stevia sweetener FNDDS

DIRECTIONS

  1. In a medium bowl, combine lettuce, onion, halved grape tomatoes, radish slices and sliced peach.
  2. In a small jar with a tight-fitting lid, shake to combine olive oil, vinegar, salt, pepper and stevia. Pour over the salad and toss to coat. Portion into two equal amounts and serve.
