4 oz, raw (yield after cooking) Italian Sausage

0 3/4 cup, chopped Red Sweet Pepper

2 cup Baby Spinach

8 large Egg (Whole)

0 1/4 tsp Salt

0 1/4 tsp Black Pepper

1 cup, shredded Cheddar Cheese

1 tsp Thyme
DIRECTIONS
- Heat oil in a 10-inch nonstick ovenproof skillet over medium-high heat. Add sausage and sauté until lightly browned, about 3 minutes. Dice the onon and bell pepper and add to the pan; sauté until vegetables are soft, about 5 minutes. Add spinach and sauté until wilted, about 2 minutes.
- Heat broiler to high. Meanwhile, whisk eggs, 1/4 cup water, salt, and black pepper in a medium bowl. Add egg mixture, cheese, and thyme to skillet; cook until eggs are set on bottom but top remains slightly runny, about 5 minutes.
- Transfer skillet to oven and broil until eggs are set and golden, about 2 minutes. Cut into wedges and serve.
