DIRECTIONS
- Cook diced onion with olive oil in a skillet over medium-low heat till softened. Cut zucchini into round disks.
- Increase heat to medium-high and add zucchini, minced garlic and red pepper flakes. Season with salt and freshly ground black pepper.
- Drizzle with lemon juice and top with julienned mint.
