INGREDIENTS

  • 24 oz raw chicken breast, skinless, boneless USDA
  • 1 tbsp Light Olive Oil
  • 4 large whole (3" dia) Tomatoes
  • 2 pepper Jalapeno Peppers
  • 2 tbsp, drained Capers
  • 3 tsp, leaves Oregano
  • 6 oz Green String Beans
  • 2 tbsp Butter

DIRECTIONS

  1. Season chicken with salt and pepper. Heat oil in a large skillet over high heat and sauté chicken until golden brown, about 3 minutes per side.
  2. Add tomatoes, jalapenos and capers to skillet. Reduce heat to medium low; cover and simmer until chicken is just cooked through, about 8 minutes.
  3. Stir in fresh minced oregano just before serving.
