2 cup Earthbound Farm - Mixed Baby Greens

1 half Avocado, Hass

0 1/4 cup Daikon Radish, grated

0 1/3 Tbsp Sesame Oil
DIRECTIONS
Use the Atkins recipes to make Teriyaki Glaze and Sherry Vinagrette.- Bring a large pot of salted boiling water to a boil.
- Season shrimp with salt and pepper. Heat oil in large skillet over high heat until hot. Saute shrimp until just pink and golden, about 1 minutes per side.
- Meanwhile, drop snow peas into boiling water, cook just 20 seconds, drain. Add snow peas and 1 tbsp teriyaki sauce to skillet with shrimp. Mix well and heat until sauce comes to a simmer, about 2 minutes. Finish with sesame oil before serving.
- Toss to combine greens, avocado, radish and 2 tbsp dressing. Serve with Teriyaki Shrimp.
Cooking Tip
Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
