24 oz, boneless, raw Tuna

2 tablespoon Extra Virgin Olive Oil

0 1/2 small Onions

0 1/2 medium (approx 2-3/4" long, 2-1/2" dia) Green Sweet Pepper

1 1/2 tsp Garlic

1 cup Red Tomatoes (Stewed, Canned)

6 each Green Olives

2 pepper Jalapeno Peppers

1 tsp Marjoram (Dried)

0 1/2 tsp Black Pepper

1 tsp Fresh Lemon Juice

2 tbsp Parsley
DIRECTIONS
- Sprinkle tuna steaks with salt and freshly ground pepper to taste; set aside. Slice bell pepper and yellow onion into thin rounds.
- Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add yellow onion and bell pepper and cook 5 minutes, until lightly golden.
- Add garlic (minced) and cook 1 minute more. Stir in chopped olives, tomatoes, sliced jalapeños, marjoram and pepper.
- Simmer uncovered 15 minutes, until sauce thickens slightly. Stir in lemon juice. Transfer to a bowl.
- Wipe out skillet. Increase heat to medium-high. Heat remaining oil until very hot. Cook tuna steaks 2 3 minutes per side for medium-rare, or to desired degree of doneness.
- Pour sauce over fish; reduce heat to low. Cook 2 minutes more just to heat through. Garnish with parsley before serving.
