0 1/3 tbsp Unseasoned Rice Wine Vinegar

0 1/2 tsp Dry Mustard

1 tsp, ground Thyme (Dried)

1 dash Salt

1 dash Black Pepper

2 cup, cooked, diced Chicken Breast

1 stalk, medium (7-1/2" - 8" long) Celery

0 1/4 cucumber (8-1/4") Cucumber (with Peel)

0 1/4 medium (2-3/4" dia) (approx 3 per lb) Apples

0 1/2 cup, chopped Walnuts

8 large leaf Boston Lettuce

1 tbsp Parmesan Cheese (Shredded)
DIRECTIONS
- Whisk the first 7 ingredients (yogurt through pepper) together in a medium mixing bowl. Dice the celery, cucumber and apple.
- Fold in the next 5 ingredients (chicken through walnuts). Optional: toast walnuts at 350°F for 5-8 minutes first.
- Place 2 lettuce leaves on each plate and spoon 1/4 of chicken salad into each cup.
- Sprinkle with Parmesan cheese and serve.
