DIRECTIONS
- To make dressing, in a large bowl, combine red onion, cilantro, lime juice, olive oil, salt and jalapeño.
- Add chopped zucchini, chopped bell pepper and chopped jicama; toss well.
- Serve chilled or at room temperature.
