INGREDIENTS

  • 6 Tbsp Unsalted, Butter, Stick
  • 0 1/2 Atkins Soy-Free Flour Mix
  • 2 oz baking chocolate, square, unsweetened USDA
  • 1 oz semisweet style chocolate baking chips, 45% cocoa, no sugar added Lily's Sweets
  • 0 1/4 cup heavy whipping cream USDA
  • 1 cup sucralose artificial sweetener, granular Splenda
  • 2 lrg raw egg USDA
  • 1 tsp vanilla extract USDA
  • 0 1/3 cup cocoa powder, unsweetened USDA
  • 0 1/2 tsp table salt USDA

DIRECTIONS

You will need ½ cup (57 grams) of the Atkins Soy-Free Flour Mix for this recipe. One serving of the flour mix is one cup, so ½ cup is equal to ½ serving.

  1. Heat oven to 350° and prepare an 8-inch by 8-inch baking pan with parchment paper.
  2. In a medium microwave safe bowl, melt together the butter, baking chocolate and chocolate chips in 30 second intervals, stirring between, until fully melted. Whisk in the cream and sweetener until smooth. Add eggs and vanilla, whisking again until fully incorporated and smooth. Add flour mix, cocoa powder, and salt and fold in until fully incorporated. Spread in an even layer into the prepared baking pan and bake until a toothpick comes out with some moist crumbs, 15-20 minutes.
  3. Allow brownies to cool, then cut into 4 rows by 4 rows for 16 even pieces and serve. One piece (1/16th of the full recipe) is one serving.
